Stuffed Veggie Flatbreads

 

Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 3/4 cup warm water

For the Filling:

  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 medium carrot, grated
  • 1 cup cabbage, finely shredded
  • 1 cup cooked chicken, shredded (optional)
  • 2 eggs, lightly beaten
  • Salt and pepper to taste
  • 1 teaspoon soy sauce (optional)
  • 1 teaspoon sesame oil (optional)
  • Chopped green onions (for garnish)

Instructions:

  1. Prepare the Dough:
    • In a large bowl, combine the flour and salt.
    • Add the vegetable oil and warm water, mixing until a dough forms.
    • Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
    • Cover with a damp cloth and let rest for at least 30 minutes.
  2. Prepare the Filling:
    • In a large skillet, heat the vegetable oil over medium heat.
    • Add the chopped onion and garlic, cooking until softened and fragrant.
    • Add the grated carrot and shredded cabbage, cooking until they start to soften.
    • If using chicken, add it to the skillet and stir to combine.
    • Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side.
    • Scramble the eggs until cooked through, then mix with the vegetables.
    • Season with salt, pepper, soy sauce, and sesame oil (if using).
    • Remove from heat and let the filling cool slightly.
  3. Assemble the Flatbreads:
    • Divide the dough into equal-sized balls (about 8-10).
    • Roll each ball into a small circle on a floured surface.
    • Place a generous spoonful of the filling in the center of each circle.
    • Fold the edges over the filling, pinching to seal and forming a flat round shape.
    • Gently flatten with your hands or a rolling pin.
  4. Cook the Flatbreads:
    • Heat a skillet or griddle over medium heat and lightly grease with oil.
    • Cook each flatbread for about 3-4 minutes on each side until golden brown and cooked through.
    • Repeat with the remaining flatbreads.
  5. Serve:
    • Garnish with chopped green onions.
    • Serve hot and enjoy your stuffed veggie flatbreads!
