3 cups all-purpose flour, plus more for shaping
1/2 teaspoon instant yeast
1 1/4 teaspoon salt
1 1/2 cups very warm (but not boiling) filtered water (about 100 °F)



Mix dry ingredients: Whisk together flour, yeast and salt in a large bowl.
Moisturize the dough: Add the warm water to the dry ingredients. Mix with a rubber spatula until a sticky dough forms. Using warm water speeds up the fermentation process, while filtered water can support yeast activity.

First dough: Cover the bowl with plastic wrap and let stand at room temperature for about 3 hours, or until the dough has doubled in size and is bubbling.The dough will look soft and moist.
Shape the dough: Place the dough on a well-floured surface. Using floured hands, gently fold the dough a few times to form a ball. This step does not require extensive kneading.
Prepare preparation: Place the shaped dough on a piece of baking paper.Next, place the parchment paper with the dough in a 4-quart slow cooker. A taller slow cooker can help produce a taller loaf because the bread won’t rise as much as it would in an oven.

Bake: Cover and cook on high for 2-3 hours, or until the internal temperature of the bread reaches 190-200°F. Check the bread after 90 minutes, especially if this is your first time baking bread in your slow cooker.

For a crispy crust: If you prefer a golden crust, place the bread under the grill for a few minutes after cooking in the slow cooker.Watch it closely to avoid burns.
Cool and serve: Allow the bread to cool before cutting. This resting phase allows the internal structure of the bread to firm up and makes the bread easier to cut.
