Recipe for baked donuts

*Ingredients

°320 g flour
°14 g fresh yeast (or 5/6 g dry yeast)
°20 g butter
°50 g powdered sugar
°3 cl orange blossom water
°1 pinch of salt
° melted butter + sugar (for refinement)
° 12 cl whole milk + 2 tablespoons
° 1 egg

* Preparation:

STEP 1

First heat the milk, add the sugar and butter and heat until the sugar and butter are dissolved and melt and let cool slightly.

STEP 2

In a salad bowl, mix the flour with the salt and the yeast, form a well and add the egg, the slightly warm milk and the orange blossom water, knead for 4/5 minutes (your dough must be homogeneous and elastic.)

STEP 3

Flour the bottom of a bowl, place the dough in it and cover with a cloth, let it rest at room temperature for 1 hour (the dough should have doubled in volume).

Line a baking tray with baking paper and put some water in the drip tray, dust the work surface with flour, place the dough on it and spread it out to degas.

STEP 5

Gently roll out the donut dough to 1.5cm thick. Using 2 cutters, one large and one smaller, cut out the donut with the large cutter and make a hole in the center with the smaller one, place the donut on the baking sheet, repeat the process with all the donuts (you can cook the leftover pasta in the middle etc., then they are less attractive, but can be enjoyed very well.

Cover the baking tray with a clean kitchen towel and let the dough rest for about 30 minutes.

Heat Preheat the oven to ºg.6/7 at 190°.

STEP 8

Brush your donuts with milk and bake for 9 minutes. If your donuts are not golden brown at all, let them stand for another 1 to 2 minutes, but no longer or they will dry out.

STEP 9

Take the donuts out of the oven, melt some butter and, using a pastry brush, brush the donuts with powdered sugar. Or at most you can add cinnamon.
