Crispy Baked Potato Wedges



  • 4 large potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)


  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare Potatoes:
    • Wash and scrub the potatoes thoroughly. Cut them into wedges by slicing each potato in half lengthwise, then slice each half into 3-4 wedges, depending on the size of the potato.
  3. Season Potatoes:
    • In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, oregano, thyme, black pepper, and salt. Add the potato wedges to the bowl and toss them until they are evenly coated with the seasoning mixture.
  4. Bake Potatoes:
    • Arrange the seasoned potato wedges in a single layer on the prepared baking sheet. Make sure they are not overlapping to ensure they bake evenly. Sprinkle the grated Parmesan cheese evenly over the potato wedges.
  5. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy. Flip the wedges halfway through the baking time to ensure they crisp up on both sides.
  6. Serve:
    • Once baked, remove the potato wedges from the oven and let them cool for a few minutes. Sprinkle with fresh parsley if desired. Serve warm with your favorite dipping sauce.
