Ingredients
1 lb ground beef
1 small onion, finely diced
2 cloves garlic, minced
1 packet taco seasoning
1/3 cup water
1 can (15 oz) black beans, drained and rinsed
1 cup corn, drained
2 cups crushed tortilla chips, plus extra for topping
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup salsa
1/2 cup sour cream
1 medium tomato, diced
1 1/2 cups shredded lettuce
Salt and black pepper to taste
Preparation Steps
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Heat a large skillet over medium-high heat. Add the ground beef and diced onion, then cook for 6–8 minutes, breaking the beef into small pieces until browned and the onion is tender.
- Drain any excess grease. Add the minced garlic and cook for about 30 seconds, just until fragrant.
- Stir in the taco seasoning and water. Reduce the heat to medium and simmer for 2–3 minutes until the beef is well coated and most of the liquid has been absorbed.
- Add the black beans, corn, and salsa. Stir everything together and cook for another 2 minutes. Taste and adjust with salt and black pepper if needed.
- Spread half of the crushed tortilla chips evenly across the bottom of the prepared baking dish.
- Spoon the seasoned beef mixture over the chips and spread it into an even layer.
- Sprinkle half of the cheddar and Monterey Jack cheese over the beef. Add the remaining tortilla chips, followed by the remaining cheese.
- Bake uncovered for 15–20 minutes, or until the casserole is hot throughout and the cheese is completely melted and lightly golden around the edges.
- Remove the casserole from the oven and let it rest for about 5 minutes. Add small spoonfuls of sour cream over the top, followed by the diced tomatoes and shredded lettuce.
