Cheesy Stuffed Chicken Breasts with Bacon and Crispy Coating

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 1 cup crushed cornflakes or bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons milk
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Chicken:
    • Carefully slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  3. Stuff the Chicken:
    • In a small bowl, mix the shredded mozzarella and cheddar cheeses.
    • Stuff each chicken breast with the cheese mixture and some crumbled bacon.
    • Secure the opening with toothpicks to keep the filling inside.
  4. Prepare the Coating:
    • In a shallow dish, mix the crushed cornflakes (or bread crumbs), grated Parmesan cheese, paprika, garlic powder, salt, and black pepper.
    • In another shallow dish, beat the eggs and milk together.
  5. Coat the Chicken:
    • Dip each stuffed chicken breast first in the egg mixture, then coat it in the cornflake mixture, pressing gently to adhere.
  6. Bake the Chicken:
    • Place the coated chicken breasts on the prepared baking sheet.
    • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
  7. Garnish and Serve:
    • Remove the toothpicks before serving.
    • Garnish with chopped fresh parsley, if desired.
    • Serve hot, with your favorite sides.
