Preparation
1. Prepare the Apple Filling
Melt the butter in a large skillet over medium heat. Add the diced apples, brown sugar, cinnamon, and nutmeg.
Cook for 6–8 minutes, stirring occasionally, until the apples begin to soften.
2. Thicken the Filling
Mix the cornstarch with the water until smooth. Stir it into the apples and cook for another 1–2 minutes until the sauce thickens.
Remove from the heat and stir in the vanilla extract. Let the filling cool slightly.

Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
Spoon some of the apple filling down the center of each tortilla. Roll tightly and place seam-side down in the prepared baking dish.
4. Add the Topping
Brush the tortillas lightly with melted butter.
Combine the granulated sugar and cinnamon, then sprinkle it evenly over the enchiladas.
Drizzle caramel sauce generously over the top and sprinkle with chopped pecans if desired.
5. Bake
Bake uncovered for 20–25 minutes, until the tortillas are lightly golden and slightly crisp around the edges and the apple filling is hot.
6. Serve
Allow the enchiladas to rest for about 5 minutes before serving.
Drizzle with additional warm caramel sauce. For an extra-indulgent dessert, serve with vanilla ice cream or whipped cream.
Helpful Tips
Use firm apples such as Granny Smith, Honeycrisp, or Fuji so the filling stays tender without becoming mushy.
Don’t overfill the tortillas, or the apple mixture may spill out while baking.
For extra crunch, add chopped pecans or walnuts to the apple filling or sprinkle them over the top before baking.
Storage
Store leftover Caramel Apple Pie Enchiladas covered in the refrigerator for up to 3 days. Reheat them in the oven or microwave until warm.
With tender cinnamon apples wrapped in golden tortillas and finished with warm caramel sauce, this easy dessert is a delicious alternative to traditional apple pie.
