Surf and Turf Skillet with Saffron Rice

 

 

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 lb steak (ribeye or sirloin), cut into bite-sized pieces
  • 1 cup red bell pepper, diced
  • 1 cup green bell pepper, diced
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup saffron rice
  • 2 cups chicken broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Lemon wedges for serving
  • Fresh parsley, chopped for garnish

Instructions:

  1. Prepare the Rice:
    • In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until translucent.
    • Add the saffron rice and stir to coat the rice with the oil.
    • Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer until the rice is cooked and the liquid is absorbed (about 15-20 minutes). Fluff with a fork and set aside.
  2. Cook the Steak:
    • In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat.
    • Season the steak pieces with salt, pepper, paprika, garlic powder, and onion powder.
    • Add the steak to the skillet and cook until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.
  3. Cook the Shrimp:
    • In the same skillet, add the remaining tablespoon of butter.
    • Season the shrimp with salt, pepper, and paprika.
    • Add the shrimp to the skillet and cook until pink and opaque (about 2-3 minutes per side). Remove the shrimp from the skillet and set aside.
  4. Combine and Serve:
    • In the same skillet, add the diced red and green bell peppers. Sauté until they are slightly softened.
    • Return the steak and shrimp to the skillet, and toss everything together until well combined and heated through.
    • Serve the surf and turf mixture over a bed of saffron rice. Garnish with fresh parsley and serve with lemon wedges on the side.

Cajun Shrimp and Steak with Bell Peppers

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 lb steak (flank or skirt), sliced into strips
  • 1 cup red bell pepper, sliced
  • 1 cup green bell pepper, sliced
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tbsp lemon juice
  • Fresh parsley, chopped for garnish

  1. Season the shrimp and steak with Cajun seasoning.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the steak strips and cook until browned. Remove from the skillet and set aside.
  4. Add the butter to the skillet, then the shrimp, and cook until pink. Remove and set aside.
  5. In the same skillet, add the bell peppers and minced garlic. Sauté until softened.
  6. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
  7. Return the steak and shrimp to the skillet, toss to combine, and heat through.
  8. Garnish with fresh parsley before serving.

Asian-inspired Shrimp and Steak Stir-Fry

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 lb steak (sirloin or ribeye), thinly sliced
  • 1 cup red bell pepper, sliced
  • 1 cup green bell pepper, sliced
  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 1 tbsp sesame seeds
  • Fresh cilantro, chopped for garnish

Instructions:

  1. In a small bowl, mix soy sauce, hoisin sauce, oyster sauce, and sesame oil.
  2. Heat vegetable oil in a large wok or skillet over high heat.
  3. Add the steak slices and stir-fry until browned. Remove and set aside.
  4. Add the shrimp and cook until pink. Remove and set aside.
  5. In the same wok, add the minced garlic and ginger, and sauté until fragrant.
  6. Add the bell peppers and stir-fry until they start to soften.
  7. Return the steak and shrimp to the wok, pour in the sauce mixture, and toss to coat.
  8. Add the cornstarch slurry and stir until the sauce thickens.
  9. Garnish with sesame seeds and fresh cilantro before serving.
