Stuffed Chicken Breast with Spinach and Cheese

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach leaves
  • 1 cup shredded mozzarella cheese
  • 1/2 cup roasted red peppers, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Toothpicks

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the chicken breasts:
    • Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
    • Season the inside of each pocket with salt, pepper, and Italian seasoning.
  3. Prepare the filling:
    • In a small pan, heat the olive oil over medium heat.
    • Add the minced garlic and sauté until fragrant, about 1 minute.
    • Add the spinach leaves and cook until wilted, about 2-3 minutes. Remove from heat.
  4. Stuff the chicken breasts:
    • Layer the spinach, roasted red peppers, and shredded mozzarella cheese inside each chicken breast pocket.
    • Secure the edges of the chicken with toothpicks to keep the filling inside.
  5. Cook the chicken:
    • Heat a large oven-safe skillet over medium-high heat and add a little olive oil.
    • Sear the stuffed chicken breasts on both sides until golden brown, about 3-4 minutes per side.
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  6. Serve:
    • Remove the toothpicks from the chicken breasts and let rest for a few minutes before serving.
    • Serve hot with your favorite side dishes.
