Strawberry Roll Cake

3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
4 eggs
3/4 cup sugar
1 teaspoon vanilla extract
2 tablespoons canola butter

Strawberry jam filling

300 ml strawberries, cut into small pieces
1/4 cup sugar
1 tablespoon water
Butter-cheese filling
300 ml cream cheese, at room temperature
1 cup cream whipped cream, chilled
1/2 cup powdered sugar
1 teaspoon vanilla extract

Powdered sugar

Prepare the strawberry jam filling. Combine strawberries, sugar and water in a small saucepan. Bring to a boil, stirring occasionally. Press the strawberries with the back of the spoon to speed up the process. Cook for about 15-20 minutes until the mixture thickens. Remove from heat and let cool before using.

Prepare the cake.

Preheat the oven to 180 degrees Celsius. Grease a 30×40 cm baking tray and line it with baking paper.
Sift the flour and salt into a medium bowl. Put aside.
Add eggs, sugar and vanilla to a large bowl. Beat with an electric mixer until the lemon is thoroughly yellow. Add the oil and mix until well combined.

Add the flour mixture slowly.
Pour the batter into the prepared pan and spread it evenly into the corners with the back of the spatula.
Bake for 12-15 minutes until a toothpick inserted into the center comes out.

Take a tea towel and sprinkle powdered sugar on it. This will prevent the cake from sticking to the fabric. Remove the cake from the towel. Remove the paper peel and dust with powdered sugar.

While it is still hot, open it in the middle on a towel. You have to do this while it’s still warm/warm or it will break. Let it cool completely.

Prepare the buttermilk. In a bowl, beat the cheese with powdered sugar and vanilla. In another bowl, beat the butter with an electric mixer until stiff peaks form. Fold them together.
Remove the cake and distribute the strawberry filling evenly over the cake.

Share the cream cheese filling over the strawberries.
Lift the cake up. Leave it in the refrigerator for at least 1 hour before serving.
Before serving, sprinkle with powdered sugar and decorate with fresh strawberries.
