Cheesy Mini Meatloaves Recipe



  • 1 1/2 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • Fresh parsley, chopped (for garnish)


  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin with non-stick cooking spray or line with silicone muffin liners.
  2. Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, chopped bell pepper, minced garlic, egg, Worcestershire sauce, dried oregano, dried basil, salt, and black pepper. Mix until well combined.
  3. Shape the Mini Meatloaves: Divide the meat mixture evenly among the muffin cups, pressing down lightly to fill each cup. Make a small indentation in the center of each meatloaf.
  4. Add the Topping: In a small bowl, mix together the ketchup, brown sugar, and yellow mustard. Spoon a small amount of the ketchup mixture over each mini meatloaf. Top each meatloaf with shredded cheddar cheese.
  5. Bake the Meatloaves: Bake in the preheated oven for 20-25 minutes, or until the meatloaves are cooked through and the cheese is melted and bubbly.
  6. Garnish and Serve: Let the mini meatloaves cool slightly in the muffin tin before removing. Garnish with chopped fresh parsley and serve.
