Slow Cooker Stuffed Pepper Soup

Slow Cooker Stuffed Pepper Soup

My mom always made this recipe with some bread on the side and it was always divine

1 pound ground beef, browned and drained

1/2 onion, finely chopped

2 assorted peppers, deseeded and diced

3 garlic cloves, finely chopped

1 can (14 oz) diced tomatoes, undrained

1 can (14 oz) salsa tomato

3 cups strong meat broth

1 cup prepared Rice (or, for a quicker option, opt for instant rice and add it in the last 30 minutes of cooking)

1 teaspoon garlic salt

1 teaspoon dried oregano

Season with salt and pepper

Optional: grated Cheddar cheese for extra enjoyment

Easily combine all the ingredients except the rice in your slow cooking pot.

Attach the lid and place the pot on low heat for 6-8 hours or on a faster setting for 3-4 hours, until the flavors combine harmoniously.

Serve this heartwarming soup piping hot, garnished with a generous sprinkling of cheddar cheese.
