Apple Mousse Dessert with Surprise Filling

 

 

Ingredients:

For the Apple Filling:

  • 3 large apples, peeled, cored, and diced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

For the Apple Mousse:

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons gelatin powder
  • 1/4 cup water

For the Red Glaze:

  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/2 cup sweetened condensed milk
  • 1 tablespoon gelatin powder
  • 1/4 cup water
  • 7 oz white chocolate, chopped
  • Red food coloring

  • Small chocolate sticks (for stems)

Instructions:

  1. Prepare the Apple Filling:
    • In a medium saucepan, combine the diced apples, sugar, lemon juice, and cinnamon.
    • Cook over medium heat until the apples are soft, about 10 minutes.
    • Stir in the cornstarch mixture and cook until the filling thickens, about 2 minutes.
    • Remove from heat and let cool completely.
  2. Prepare the Apple Mousse:
    • In a small bowl, sprinkle the gelatin powder over 1/4 cup of water and let it bloom for about 5 minutes.
    • In a large bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
    • Melt the bloomed gelatin in the microwave for about 10 seconds until it becomes liquid.
    • Gently fold the melted gelatin into the whipped cream mixture until well combined.
  3. Assemble the Desserts:
    • Fill half-sphere silicone molds halfway with the apple mousse.
    • Place a spoonful of the cooled apple filling in the center of each mold.
    • Fill the rest of the mold with the apple mousse, covering the apple filling completely.
    • Smooth the tops and freeze the molds until the mousse is firm, about 2 hours.
  4. Prepare the Red Glaze:
    • In a small bowl, sprinkle the gelatin powder over 1/4 cup of water and let it bloom for about 5 minutes.
    • In a medium saucepan, combine the sugar, water, and sweetened condensed milk.
    • Bring the mixture to a boil, then remove from heat and stir in the bloomed gelatin until dissolved.
    • Pour the hot mixture over the chopped white chocolate and let it sit for 2 minutes.
    • Stir until the chocolate is completely melted and smooth.
    • Add red food coloring until the desired shade is reached.
    • Let the glaze cool to about 95°F (35°C) before using.
  5. Glaze the Desserts:
    • Remove the frozen mousse domes from the silicone molds.
    • Place the domes on a wire rack with a baking sheet underneath to catch excess glaze.
    • Pour the red glaze over the domes, covering them completely.
    • Allow the glaze to set for a few minutes.
  6. Decorate:
    • Insert a small chocolate stick into the top of each dome to resemble an apple stem.
    • Transfer the glazed desserts to a serving platter and refrigerate until ready to serve.
