Salted Caramel Apple Bread Pudding

 

 

Ingredients:

  • 6 cups cubed day-old bread (brioche or challah)
  • 2 cups peeled and diced apples (Granny Smith or Honeycrisp)
  • 4 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt

For the Salted Caramel Sauce:

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon sea salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the cubed bread and diced apples. Toss to mix evenly.
  3. In another bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Pour the egg mixture over the bread and apple mixture and stir to coat all the bread cubes. Let it sit for about 10 minutes to absorb the liquid.
  5. Transfer the mixture to the prepared baking dish and spread it out evenly.
  6. Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. While the bread pudding is baking, prepare the salted caramel sauce. In a medium saucepan, combine the sugar and water over medium heat. Cook, stirring occasionally, until the sugar dissolves and turns a deep amber color.
  8. Carefully add the heavy cream (the mixture will bubble up) and stir until smooth. Remove from heat and stir in the butter and sea salt.
  9. Drizzle the salted caramel sauce over the warm bread pudding before serving.
