Pineapple Quick Bread


  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple (with juice)
  • 1/2 cup sour cream
  • 1/2 cup chopped walnuts or pecans (optional)


  1. Prepare the Oven and Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix the Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.
  3. Mix the Wet Ingredients:
    • In a medium bowl, beat the eggs. Add the melted butter, vanilla extract, crushed pineapple (with juice), and sour cream. Mix until smooth.
  4. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix.
    • If using, fold in the chopped walnuts or pecans.
  5. Bake the Bread:
    • Pour the batter into the prepared loaf pan, spreading it evenly.
    • Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  6. Cool the Bread:
    • Remove the bread from the oven and let it cool in the pan for about 10 minutes.
    • Transfer the bread to a wire rack to cool completely.
  7. Serve:
    • Once the bread is completely cool, slice and serve. Enjoy the moist, flavorful pineapple quick bread with a cup of tea or coffee.
