Friends always ask me for this recipe and I’m always surprised by the answer


2 packages (8 oz) cream cheese, softened

2 eggs

1 teaspoon vanilla extract


1 cup sugar

1 prepared graham cracker crust

For the topping:

1 cup sour cream

2 tablespoons sugar


1/2 teaspoon vanilla extract

In a large bowl, stir together softened cream cheese, eggs, sugar and vanilla until the mixture is smooth and creamy
Carefully pour the filling into the graham cracker base, making sure it is evenly distributed.
Bake the cake for about 30 to 35 minutes or until the edges of the cake are set while the center remains slightly wobbly. While the cake is baking, prepare the topping by mixing the sour cream, sugar and vanilla in a separate bowl until smooth.Once the cake is baked, carefully spoon the sour cream over the warm filling.

Put the cake back in the oven and bake for another 10 minutes.
After baking, allow the cake to cool to room temperature and then place it in the refrigerator for at least 4 hours, ideally overnight, so that the cake can set completely.
