No-Cook Coconut Pie
This No-Cook Coconut Pie is creamy, fluffy, and packed with sweet coconut flavor. A buttery graham cracker crust holds a smooth vanilla-coconut filling, while toasted coconut on top adds a lightly crisp finish.
Because there’s no oven required, this easy no-bake coconut pie is especially convenient for summer gatherings, holidays, potlucks, or anytime you need a simple make-ahead dessert. It takes only minutes to assemble, then the refrigerator does the rest.
Ingredients
- 2 packages (3.4 ounces each) instant vanilla pudding mix
- 2 3/4 cups cold 2% milk
- 1 teaspoon coconut extract
- 1 container (8 ounces) frozen whipped topping, thawed
- 1/2 cup sweetened shredded coconut
- 1 prepared 9-inch graham cracker crust
- 1/3 cup toasted coconut flakes, for topping
How to Make No-Cook Coconut Pie
- Prepare the pudding. In a large mixing bowl, whisk the instant vanilla pudding mix with the cold milk for about 2 minutes, until smooth and beginning to thicken.
- Add coconut flavor. Stir in the coconut extract and shredded coconut until evenly distributed throughout the pudding.
- Fold in the whipped topping. Gently fold the thawed whipped topping into the pudding mixture. Avoid vigorous stirring so the filling stays light and fluffy.
- Fill the crust. Spoon the coconut cream filling into the graham cracker crust and spread the top evenly with a spatula.
- Chill the pie. Refrigerate for at least 4 hours, or until the filling is thoroughly chilled and firm enough to slice cleanly.
- Add the topping. Just before serving, sprinkle toasted coconut generously over the top for extra coconut flavor and a lightly crunchy texture.

For the best toasted-coconut flavor, lightly toast the coconut in a dry skillet over medium-low heat, stirring frequently. Remove it as soon as it turns golden—it can go from perfectly toasted to burned very quickly.
