No-Bake Strawberry Cheesecake



  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted
  • For the Cheesecake Filling:
    • 2 (8 oz) packages cream cheese, softened
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1 tablespoon lemon juice
    • 2 cups heavy whipping cream
  • For the Topping:
    • 2 cups fresh strawberries, hulled and sliced
    • 1/4 cup powdered sugar (for dusting)


  1. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
    • Press the mixture evenly into the bottom of a 9×13-inch baking dish. Use the back of a spoon to press it firmly. Refrigerate while preparing the filling.
  2. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Add the powdered sugar, vanilla extract, and lemon juice. Beat until well combined.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  3. Assemble the Cheesecake:
    • Spread half of the cheesecake filling over the prepared crust.
    • Layer half of the sliced strawberries over the filling.
    • Spread the remaining cheesecake filling over the strawberries, smoothing the top with a spatula.
    • Arrange the remaining sliced strawberries on top of the cheesecake.
  4. Chill:
    • Refrigerate the cheesecake for at least 4 hours, or until set. For best results, refrigerate overnight.
  5. Serve:
    • Before serving, dust the top with powdered sugar.
    • Slice and serve chilled.
