No-Bake Strawberry Cheesecake




For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream, cold
  • 1/4 cup powdered sugar

For the Topping:


  • Fresh strawberries, halved
  • Optional: chocolate shavings, additional whipped cream for decoration


  1. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated with butter.
    • Press the mixture into the bottom of a 9-inch springform pan, pressing firmly to create an even layer. Place the crust in the refrigerator to set while you prepare the filling.
  2. Prepare the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
    • In a separate bowl, whip the cold heavy cream and powdered sugar until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until fully combined.
  3. Assemble the Cheesecake:
    • Pour half of the cheesecake filling over the prepared crust. Spread it evenly.
    • Arrange a layer of fresh strawberry halves over the filling.
    • Pour the remaining cheesecake filling over the strawberries and spread it evenly.
  4. Chill:
    • Cover the cheesecake with plastic wrap and refrigerate for at least 6 hours or overnight, until the cheesecake is firm.
  5. Decorate and Serve:
    • Once the cheesecake is set, remove it from the springform pan and place it on a serving plate.
    • Decorate the top with halved fresh strawberries, chocolate shavings, and additional whipped cream, if desired.
    • Slice and serve chilled.
