Hawaiian Banana Bread


1/2 cup soft butter
1 cup sugar
2 large eggs
1 very ripe banana, mashed
1 cup mashed pineapple (do not drain)
2 cups flour
1 teaspoon baking powder
1 /2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup shredded coconut


Preheat oven to 350 degrees.
In a large bowl, beat butter and sugar with a mixer until fluffy. Add the eggs one at a time and mix.
Add banana and pineapple puree.

In a separate medium bowl, combine flour, baking powder, baking soda and salt.Add to wet ingredients.


Add the coconut flakes or pieces.
Pour the mixture into a greased loaf pan (9×5). Bake for 60 minutes or until a toothpick comes out clean.
