Ingredients for Fried Dough:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup warm water
  • Vegetable oil for frying

Ingredients for Fresh Cheese:

  • 1 gallon whole milk
  • 1/4 cup white vinegar or lemon juice
  • 1 teaspoon salt


For the Fresh Cheese:

  1. Heat the Milk:
    • Pour the milk into a large pot and heat over medium heat until it reaches a gentle simmer (about 190°F or 88°C). Do not let it boil.
  2. Curdle the Milk:
    • Remove the pot from heat and slowly add the vinegar or lemon juice, stirring gently. The milk will begin to curdle and form curds.
  3. Strain the Curds:
    • Let the mixture sit for about 10 minutes to allow the curds to fully form.
    • Line a colander with a cheesecloth and place it over a large bowl.
    • Pour the curdled milk into the cheesecloth-lined colander to strain out the whey. Let it drain for about an hour.
  4. Season the Cheese:
    • Transfer the curds to a bowl and mix in the salt.
    • Store the fresh cheese in the refrigerator until ready to use.

For the Fried Dough:

  1. Prepare the Dough:
    • In a large bowl, combine the flour, baking powder, salt, and sugar.
    • Gradually add the warm water, mixing until a dough forms.
    • Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
  2. Rest the Dough:
    • Cover the dough with a damp cloth and let it rest for about 30 minutes.
  3. Shape the Dough:
    • Divide the dough into small pieces and roll each piece into a ball.
    • Flatten each ball into a thin round or rectangular shape.
  4. Fry the Dough:
    • Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
    • Fry the dough pieces in batches, turning them once, until they are golden brown and puffy (about 2-3 minutes per side).
    • Remove with a slotted spoon and drain on paper towels.

To Serve:

  • Serve the warm fried dough with the fresh cheese on the side. You can also sprinkle powdered sugar on the fried dough or drizzle with honey for added sweetness.
