Hamburger soup

Hamburger soup

Hamburger soup is easy, cheap and ready in 30 minutes. It consists of ground beef, noodles, and vegetables in a rich, flavorful broth.

1 tablespoon olive oil
1/2 medium onion, diced
1 tablespoon minced garlic
1 pound lean ground beef
10 ounces condensed tomato soup plus 1 full can water
14 ounces beef broth or about 2 cups
1 cup corn or other canned -/Frozen vegetables
1 cup small pasta, cooked according to package instructions (or raw*)

Heat olive oil in a pot or pan (5 liters). Add the onion and sauté for a few minutes until soft. Crumble the ground beef, add the garlic to the pot with the onion and cook until the beef is no longer pink.Drain off as much fat as possible. (I use paper towels to absorb grease).

Season the meat with salt and pepper.
Add beef broth, tomato soup and water. Bring to a boil over medium-high heat, then reduce heat and simmer (medium to medium-low).Add vegetables and continue to simmer until hot; approx. 6-8 minutes. Add the cooked noodles.

Divide into bowls, garnish with parsley if desired and serve hot.
*If you are cooking the noodles INSIDE the soup, add them to the vegetables and simmer until the noodles are tender.

If you are short on time or prefer to make the soup in a pot, you can cook the noodles in the broth while it simmers. Depending on the temperature and type of pasta, it takes between 10 and 15 minutes. Keep in mind that the longer the noodles rest, they will become soggy and it will be difficult to leave any leftovers.

potatoes are a great substitute for pasta. Cut the potatoes into pieces and cook them before adding them to the soup.If you want to cook them with the soup, that’s fine, but keep in mind that this will make the burger soup thicker. Enjoy beautiful people.
