Grilled Ham and Cheese Potato Cakes


For the Potato Cakes:

  • 4 large potatoes, peeled and boiled
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary (optional)

For the Filling:

  • 8 slices of ham
  • 8 slices of mozzarella cheese

For Grilling:

  • 2 tablespoons unsalted butter


  1. Prepare the Potato Cakes:
    • In a large bowl, mash the boiled potatoes until smooth.
    • Add the grated Parmesan cheese, shredded mozzarella cheese, flour, egg, salt, black pepper, garlic powder, and dried rosemary (if using). Mix until well combined.
    • Divide the potato mixture into 16 equal portions and shape each portion into a flat cake.
  2. Assemble the Sandwiches:
    • Take one potato cake and place a slice of ham and a slice of mozzarella cheese on top.
    • Cover with another potato cake and press gently to seal the edges.
    • Repeat with the remaining potato cakes, ham, and cheese to make 8 sandwiches.
  3. Grill the Sandwiches:
    • Heat a grill pan or a large skillet over medium heat and add a small amount of butter.
    • Place the potato cake sandwiches on the grill pan and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
    • Add more butter as needed for grilling the remaining sandwiches.
  4. Serve:
    • Remove the grilled potato cake sandwiches from the pan and let them cool slightly before serving.
    • Serve hot, garnished with fresh rosemary sprigs if desired.
