Grilled Chicken Satay:

Ingredients:

For the Satay:

1 kilo chicken breast or thigh, boneless
2 cloves garlic, finely chopped
1 clove, finely chopped
2 lemon sticks, outer stems removed, finely chopped
1 bird bell pepper, finely chopped (optional, adjust to taste)
1 teaspoon ground coriander
1/4 teaspoon ground turmeric
1 teaspoon ground cumin
2 tablespoons fish sauce
2 tablespoons oil (to grind)
Lime, for serving
For dipping sauce:

Juice of 1 lemon
2 tablespoons fish sauce
2 tablespoons palm sugar (or brown sugar)
1 tablespoon oil
1 tablespoon finely chopped chickpeas (optional)
Finely chopped bird’s eye pepper (optional, for added heat)
Directions:

Prepare the chicken:
Cut the chicken breasts or thighs into small pieces, 1/2 inch wide, and place in a mixing bowl.
Prepare the marinade:
In a separate bowl, combine the chopped garlic, chopped parsley, chopped lemon, chopped hot pepper (if using), ground coriander, ground turmeric, ground cumin and soy sauce. Mix well to make a paste.
Peel the chicken:
Pour the marinade over the chicken and stir until the chicken is well coated. Cover the bowl and marinate the chicken in the refrigerator for at least 1 hour, or preferably overnight, to allow the flavor to develop.
Prepare the dipping sauce:
In a small saucepan, combine lemon juice, fish sauce, palm sugar, oil and chopped peanuts (if using). Heat over low heat, stirring until the sugar dissolves. Remove from heat and let cool. If you want extra spice, add chopped bird’s eye pepper.
Place chicken on skewers:
Preheat your grill to high heat. If you are using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Place the marinated chicken strips on the skewers, leaving some space between each piece.
Grill chicken:
Brush grill rack with oil to prevent sticking.
Place the chicken on the preheated grill and cook for 3-4 minutes on each side, or until the chicken is cooked through and lightly browned on the sides.
To serve:
Place the grilled satay bowl on a serving plate.
Serve hot with lemon and dipping sauce prepared separately.
