Baklava Rolls



For the Pastry:

  • 1 package of phyllo dough, thawed
  • 2 cups mixed nuts (walnuts, pistachios, almonds), finely chopped
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, melted

For the Syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract


  1. Prepare the Nut Filling:
    • In a bowl, combine the finely chopped nuts and ground cinnamon. Set aside.
  2. Prepare the Phyllo Dough:
    • Preheat your oven to 350°F (175°C). Grease a large baking dish or line it with parchment paper.
    • Carefully unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out.
  3. Assemble the Baklava Rolls:
    • Take one sheet of phyllo dough and place it on a clean surface. Brush it lightly with melted butter.
    • Place another sheet of phyllo dough on top of the first one and brush it with butter. Repeat until you have layered about 3-4 sheets.
    • Sprinkle a thin layer of the nut mixture evenly over the phyllo dough.
    • Starting from the long edge, roll the phyllo dough tightly into a log.
    • Place the roll in the prepared baking dish. Repeat the process until all the phyllo dough and nut mixture are used up.
  4. Cut and Bake:
    • Using a sharp knife, cut the rolls into desired lengths, about 1-2 inches.
    • Brush the tops of the rolls with the remaining melted butter.
    • Bake in the preheated oven for 30-35 minutes, or until the baklava rolls are golden brown and crispy.
  5. Prepare the Syrup:
    • While the baklava is baking, combine the water, sugar, honey, and lemon juice in a saucepan.
    • Bring to a boil over medium-high heat, then reduce the heat and simmer for about 10 minutes, until the syrup thickens slightly.
    • Remove from heat and stir in the vanilla extract.
  6. Pour the Syrup:
    • Once the baklava rolls are done baking, remove them from the oven.
    • Immediately pour the hot syrup evenly over the baklava rolls, ensuring they are well coated.
    • Allow the baklava rolls to cool completely to room temperature, so the syrup is fully absorbed.
  7. Serve:
    • Once the baklava rolls are cooled and the syrup is absorbed, they are ready to be served. Enjoy!
