Decadent Chocolate Mousse

 

Ingredients:

  • 200 grams (7 oz) dark chocolate, chopped
  • 3 tablespoons butter, unsalted
  • 3 eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Melt the Chocolate:
    • In a heatproof bowl, combine the chopped dark chocolate and butter. Place the bowl over a pot of simmering water (double boiler method) and melt the chocolate and butter together, stirring occasionally until smooth. Remove from heat and let it cool slightly.
  2. Whip the Egg Whites:
    • In a clean, dry bowl, beat the egg whites with a pinch of salt using an electric mixer until soft peaks form. Gradually add the granulated sugar and continue to beat until stiff peaks form. Set aside.
  3. Whip the Cream:
    • In another bowl, whip the heavy cream with the vanilla extract until it forms soft peaks. Be careful not to overwhip the cream.
  4. Combine the Ingredients:
    • Add the egg yolks one at a time to the slightly cooled melted chocolate, mixing well after each addition.
    • Gently fold in the whipped cream into the chocolate mixture until combined.
    • Finally, fold in the beaten egg whites gently until no white streaks remain. Be careful not to deflate the mixture.
  5. Chill:
    • Spoon the mousse into individual serving dishes or glasses. Cover and refrigerate for at least 2 hours or until set.
  6. Serve:
    • Serve chilled, optionally garnished with whipped cream, chocolate shavings, or fresh berries.
