Cream Cheese Banana Bread Recipe

Ingredients

For the Banana Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups mashed ripe bananas (about 4 bananas)
  • 1/4 cup plain yogurt or sour cream

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
  2. Prepare the Cream Cheese Filling:
    • In a medium bowl, beat the softened cream cheese, 1/4 cup granulated sugar, 1 egg, and 1 teaspoon vanilla extract until smooth and creamy. Set aside.
  3. Mix the Dry Ingredients:
    • In a large bowl, whisk together the flour, baking soda, and salt.
  4. Mix the Wet Ingredients:
    • In another large bowl, cream the butter and brown sugar together until light and fluffy.
    • Beat in the eggs one at a time, then stir in the vanilla extract.
    • Mix in the mashed bananas and yogurt (or sour cream) until well combined.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the flour mixture to the banana mixture, stirring until just combined. Be careful not to overmix.
  6. Assemble the Bread:
    • Pour half of the banana bread batter into the prepared loaf pan.
    • Spoon the cream cheese filling evenly over the batter.
    • Gently spread the remaining banana bread batter over the cream cheese layer.
  7. Bake the Bread:
    • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center of the bread comes out clean (a few moist crumbs are okay, but there should be no raw batter).
    • If the top starts to brown too quickly, you can cover it loosely with aluminum foil halfway through baking.
  8. Cool and Serve:
    • Allow the bread to cool in the pan for about 10-15 minutes, then transfer it to a wire rack to cool completely before slicing.
