Classic New York-Style Cheesecake Recipe

 

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 4 (8 oz) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream

Instructions:

1. Prepare the Crust:

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of the prepared springform pan, creating an even layer.
  4. Bake the crust in the preheated oven for 10 minutes. Remove from the oven and set aside to cool.

2. Prepare the Cheesecake Filling:

  1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  2. Gradually add the granulated sugar, beating until well combined.
  3. Add the vanilla extract and mix until incorporated.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Mix in the sour cream and heavy cream until smooth.

3. Assemble and Bake:

  1. Pour the cheesecake filling over the cooled crust in the springform pan.
  2. Place the springform pan in a large roasting pan. Fill the roasting pan with hot water to come about halfway up the sides of the springform pan to create a water bath.
  3. Carefully transfer the roasting pan to the preheated oven.
  4. Bake the cheesecake for 1 hour and 30 minutes, or until the center is just set and slightly jiggly.
  5. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.

4. Chill the Cheesecake:

  1. Remove the cheesecake from the water bath and let it cool to room temperature.
  2. Once cooled, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow it to set completely.

5. Serve:

  1. Carefully run a knife around the edge of the springform pan before releasing the sides.
  2. Transfer the cheesecake to a serving platter.
  3. Slice and serve with your favorite toppings, such as fresh fruit, berry compote, or whipped cream.

Tips:

  • Ensure all ingredients are at room temperature to avoid lumps and achieve a smooth filling.
  • Avoid overmixing the batter to prevent incorporating too much air, which can cause cracks in the cheesecake.
  • The water bath helps to bake the cheesecake evenly and prevents cracks on the surface.
