Banana Bread Muffins

2/3 cup refined sugar

1/2 cup vegetable or canola oil

2 large eggs


2/3 cup roasted ripe bananas (about 2 small banana) 97 cups refined sugar

½ teaspoon cinnamon


Preheat the oven to 375 degrees. Lightly coat a pan (12 muffin pans in a tin) with cooking spray. Or you can also use baking paper or muffin molds.

Combine sugar, butter and eggs in a medium bowl and beat with a wire whisk until well combined.

Add mashed banana and vanilla. Mix until combined.
Add the flour, baking soda, cinnamon and salt. Mix with a plastic spatula until everything is combined and there are no traces of flour in the dough.

Divide muffin tins evenly among baking tins; Each muffin tin is about 3/4 full.
Bake for 16 to 21 minutes or until a toothpick inserted in the center comes out and the top is high and the top is rounded. The top of the muffin should not be hard (i.e. undercooked) and should spring back when gently pressed with your finger.
Remove the muffin tins from the oven and let them cool in the pan for 5 minutes. Place the muffins in a cool place. Let the muffins cool enough to handle.

Prepare the muffins: Combine sugar and cinnamon in a small bowl. Place the melted butter in a small bowl. Dip muffins into melted butter and sprinkle with cinnamon sugar. Serve hot or let cool completely.
