Baked Potatoes with Cheese and Bacon


4 large fries
8 slices of bacon
1 cup cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese, diced
8 green onions, diced, diced
1/2 cup Parmesan cheese


Preheat the oven to 375 degrees F. Bake the potatoes in the preheated oven for 1 hour. Meanwhile, cook the bacon in a pan over medium heat. Drain, chop finely and set aside.
When the potatoes are ready, let them cool for 10 minutes. Slice the potatoes in half lengthwise and place the meat in a large bowl; save skin.
Add butter, milk, butter, salt, pepper, 1/2 cup cheddar cheese, half the green onion and half the Parmesan cheese to the mashed potatoes. Mix by hand until well combined and smooth. Stir in bacon.
Spoon the mixture into the potato skins. Top each with remaining Cheddar cheese, green onions and Parmesan cheese.
Bake for another 15 minutes or until cheese is melted and potatoes are heated through.
