Cheesy Potato and Beef Burritos



  • 1 lb ground beef
  • 2 cups diced potatoes
  • 1 small onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 6 large flour tortillas
  • Fresh cilantro, chopped (optional, for garnish)
  • Hot sauce (optional, for serving)


  1. Cook the Potatoes:
    • In a large skillet, heat a tablespoon of oil over medium heat.
    • Add the diced potatoes and cook until they are tender and slightly crispy, about 10-15 minutes. Remove from the skillet and set aside.
  2. Cook the Beef:
    • In the same skillet, add the ground beef and cook until browned. Drain any excess fat.
    • Add the chopped onion, bell pepper, and garlic. Cook until the vegetables are soft.
  3. Season and Simmer:
    • Add the cumin, chili powder, smoked paprika, salt, and pepper to the beef mixture. Stir well to combine.
    • Pour in the beef broth and simmer for about 5 minutes until the mixture thickens slightly.
  4. Assemble the Burritos:
    • Lay a tortilla flat on a clean surface.
    • Spoon a portion of the beef mixture into the center of the tortilla.
    • Add a portion of the cooked potatoes on top of the beef.
    • Sprinkle with shredded cheddar cheese.
    • Drizzle with sour cream.
  5. Roll the Burritos:
    • Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top, securing the filling inside.
  6. Serve:
    • Optionally, heat the rolled burritos in a skillet or on a griddle to crisp the outside and melt the cheese further.
    • Garnish with chopped cilantro and a drizzle of hot sauce if desired.
