Preparation Steps

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.
  2. Heat the olive oil in a large cast-iron skillet over medium-high heat. Once the skillet is hot, add the pork chops in a single layer.
  3. Sear the pork chops for about 3–4 minutes on the first side without moving them. Flip and cook for another 3 minutes, or until both sides develop a deep golden-brown crust. Transfer the chops to a plate and keep them nearby.

  8. Pour in the chicken broth, then stir in the Dijon mustard and apple cider vinegar. Scrape the bottom of the skillet to release all the flavorful browned bits from searing the pork.

  10. Return the pork chops to the skillet, nestling them between the apples and onions. Spoon some of the sauce over the top of each chop.
  11. Reduce the heat to medium-low, cover, and cook for approximately 5–8 minutes, depending on the thickness of the pork chops. Cook until the pork reaches an internal temperature of 145°F (63°C).
  12. Remove the skillet from the heat and let the pork chops rest for about 3 minutes. Spoon the warm caramelized apples, onions, and brown sugar sauce generously over each chop before serving.
