Beef and Macaroni (American Goulash) Recipe

 

Ingredients:

  • 1 lb (450g) ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 2 cups elbow macaroni, uncooked
  • 1 cup shredded cheddar cheese (optional)

Instructions:

1. Cook the Ground Beef:

  1. In a large skillet or pot, cook the ground beef over medium heat until browned. Drain any excess fat.

2. Add Vegetables and Garlic:

  1. Add the chopped onion and bell peppers to the skillet with the ground beef. Cook until the vegetables are softened, about 5-7 minutes.
  2. Stir in the minced garlic and cook for another 1-2 minutes.

3. Add Tomatoes and Seasoning:

  1. Add the diced tomatoes (with their juice), tomato sauce, and tomato paste to the skillet. Stir to combine.
  2. Pour in the beef broth and add the Italian seasoning, paprika, dried basil, dried oregano, salt, and black pepper. Stir well to combine.

4. Simmer:

  1. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 15-20 minutes, stirring occasionally.

5. Cook the Macaroni:

  1. While the sauce is simmering, cook the elbow macaroni in a separate pot according to the package instructions until al dente. Drain well.

6. Combine and Cook:

  1. Add the cooked and drained macaroni to the skillet with the beef and tomato mixture. Stir well to combine.
  2. If using, stir in the shredded cheddar cheese until melted and well incorporated.

7. Serve:

  1. Serve the beef and macaroni hot, garnished with additional cheese if desired.

Tips:

  • For extra flavor, you can add a splash of Worcestershire sauce or a dash of hot sauce to the beef mixture.
  • This dish can be made ahead and reheated; it often tastes even better the next day as the flavors meld together.
  • Serve with a side of garlic bread or a simple green salad for a complete meal.
