Apple Fritters

Ingredients:

  • 2 large apples, peeled, cored, and chopped
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • Oil for frying (vegetable or canola oil)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Batter:
    • In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
    • In a separate bowl, combine the milk, beaten egg, and vanilla extract.
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
    • Fold in the chopped apples.
  2. Fry the Fritters:
    • Heat the oil in a deep-fryer or large heavy-bottomed pot to 375°F (190°C).
    • Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot.
    • Fry the fritters for about 2-3 minutes on each side, or until golden brown and cooked through.
    • Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain excess oil.
  3. Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
    • Drizzle the glaze over the warm fritters, or dip each fritter into the glaze for a thicker coating.
  4. Serve:
    • Serve the apple fritters warm, with a cup of coffee or tea.

These apple fritters are perfect for breakfast, brunch, or as a delightful dessert. Enjoy the warm, sweet, and slightly spiced flavors!
