Key Lime Bars

 

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 1 can (14 oz) sweetened condensed milk
  • 4 large egg yolks
  • 1/2 cup key lime juice (fresh or bottled)
  • 1 tablespoon key lime zest

For the Topping:

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: Green food coloring for a light green hue
  • Lime zest or crushed nuts for garnish

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the graham cracker crumbs and granulated sugar.
    • Add the melted butter and mix until well combined.
    • Press the mixture firmly into the bottom of a 9×13-inch baking dish.
    • Bake for 8-10 minutes until lightly golden. Let it cool slightly.
  2. Prepare the Filling:
    • In a large bowl, whisk together the sweetened condensed milk and egg yolks until smooth.
    • Add the key lime juice and zest, and continue to whisk until well combined.
    • Pour the filling over the slightly cooled crust and spread evenly.
  3. Bake the Bars:
    • Bake in the preheated oven for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
    • Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours to chill completely.
  4. Prepare the Topping:
    • In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
    • If desired, add a few drops of green food coloring and mix until the color is evenly distributed.
    • Spread the whipped cream evenly over the chilled key lime filling.
  5. Garnish and Serve:
    • Garnish with additional lime zest or crushed nuts if desired.
    • Cut into squares and serve chilled.
