Baked Tortellini Casserole

 

Ingredients:

  • For the Casserole:
    • 1 pound cheese tortellini (fresh or frozen)
    • 2 cups marinara sauce (homemade or store-bought)
    • 1 cup ricotta cheese
    • 1 cup shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 2 cups fresh spinach (optional)
    • 2 cloves garlic, minced
    • 1 small onion, diced
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • Fresh basil or parsley for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Tortellini:
    • Cook the tortellini according to the package instructions until al dente. Drain and set aside.
  3. Prepare the Sauce:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the diced onion and cook until translucent, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
    • If using, add the fresh spinach and cook until wilted.
    • Stir in the marinara sauce, dried oregano, dried basil, salt, and pepper. Simmer for 5-10 minutes to allow the flavors to meld.
  4. Assemble the Casserole:
    • In a large mixing bowl, combine the cooked tortellini and the marinara sauce mixture. Stir gently to coat the tortellini evenly.
    • Transfer half of the tortellini mixture to a greased 9×13-inch baking dish.
    • Dollop spoonfuls of ricotta cheese over the tortellini layer.
    • Sprinkle half of the shredded mozzarella and grated Parmesan cheese over the ricotta.
    • Add the remaining tortellini mixture on top.
    • Finish with the remaining mozzarella and Parmesan cheese.
  5. Bake the Casserole:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the top is lightly browned.
  6. Garnish and Serve:
    • Remove the casserole from the oven and let it cool slightly.
    • Garnish with fresh basil or parsley.
    • Serve hot and enjoy your delicious baked tortellini casserole!
