Creamy Tomato Basil Chicken Pasta

 

 

Ingredients:

  • For the Chicken:
    • 1.5 pounds chicken breast, cut into strips
    • Salt and pepper, to taste
    • 1 teaspoon garlic powder
    • 1 teaspoon Italian seasoning
    • 2 tablespoons olive oil
  • For the Pasta:
    • 8 ounces penne pasta
    • 2 tablespoons olive oil
    • 1 onion, chopped
    • 3 cloves garlic, minced
    • 1 can (14.5 ounces) diced tomatoes
    • 1 cup heavy cream
    • 1 cup chicken broth
    • 1/2 cup grated Parmesan cheese
    • 1 teaspoon dried basil
    • 1 teaspoon dried oregano
    • Salt and pepper, to taste
    • Fresh basil leaves, for garnish

Instructions:

  1. Cook the Chicken:
    • Season the chicken strips with salt, pepper, garlic powder, and Italian seasoning.
    • Heat the olive oil in a large skillet over medium-high heat.
    • Add the chicken strips and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from the skillet and set aside.
  2. Cook the Pasta:
    • Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. Prepare the Sauce:
    • In the same skillet used for the chicken, heat 2 tablespoons of olive oil over medium heat.
    • Add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for another minute.
    • Stir in the diced tomatoes, heavy cream, and chicken broth. Bring to a simmer.
    • Add the grated Parmesan cheese, dried basil, and dried oregano. Stir until the cheese is melted and the sauce is well combined.
    • Season with salt and pepper to taste.
  4. Combine and Serve:
    • Add the cooked penne pasta and chicken strips back to the skillet. Stir until everything is well coated with the sauce and heated through.
    • Garnish with fresh basil leaves before serving.
