Zucchini Fritters

 

Ingredients:

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded cheddar cheese
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Vegetable oil for frying

For the Dipping Sauce:

  • 1 cup sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh chives
  • Salt and pepper to taste

Instructions:

  1. Prepare the Zucchini:
    • Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.
    • After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much liquid as possible.
  2. Prepare the Fritter Mixture:
    • In a large bowl, combine the grated and drained zucchini, Parmesan cheese, cheddar cheese, eggs, flour, baking powder, green onions, garlic, black pepper, and paprika. Mix until well combined.
  3. Fry the Fritters:
    • Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
    • Scoop 2-3 tablespoons of the zucchini mixture and drop it into the hot oil, flattening it slightly with a spatula.
    • Fry for 2-3 minutes on each side, or until golden brown and crispy.
    • Remove the fritters from the skillet and drain on a paper towel-lined plate. Repeat with the remaining mixture.
  4. Prepare the Dipping Sauce:
    • In a small bowl, combine the sour cream, lemon juice, chopped chives, salt, and pepper. Mix until well combined.
  5. Serve:
    • Serve the warm zucchini fritters with the dipping sauce on the side.
