Vegetable Casserole Recipe

 

 

Ingredients:

  • 2 large potatoes, peeled and grated
  • 2 large carrots, peeled and grated
  • 2 large red onions, finely chopped
  • 1 bunch fresh dill, chopped
  • 1 bunch fresh parsley, chopped
  • 1 cup grated cheese (cheddar or your choice)
  • 4 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. Prepare Vegetables: In a large bowl, combine the grated potatoes, grated carrots, chopped red onions, chopped dill, and chopped parsley. Mix well.
  3. Mix Ingredients: In a separate bowl, beat the eggs until well mixed. Add the flour, baking powder, salt, and pepper. Mix until smooth.
  4. Combine: Pour the egg mixture over the vegetables and mix until all ingredients are well combined. Add half of the grated cheese and mix again.
  5. Assemble the Casserole: Pour the vegetable mixture into the prepared baking dish. Spread it out evenly. Sprinkle the remaining grated cheese on top.
  6. Bake: Bake in the preheated oven for 40-45 minutes or until the top is golden brown and the casserole is set.
  7. Cool and Serve: Let the casserole cool for a few minutes before cutting it into squares. Serve warm and enjoy!
