 Swirled Brioche Buns

 Ingredients:
– *For the dough:*
– 4 cups all-purpose flour
– 1/4 cup granulated sugar
– 2 1/4 teaspoons active dry yeast (1 packet)
– 1 teaspoon salt
– 1 cup warm milk (110°F/45°C)
– 1/4 cup unsalted butter, melted
– 2 large eggs

– *For the topping:*
– 1 large egg (for egg wash)
– 2 tablespoons milk

 Instructions:

Dough Preparation:
1. *Activate the yeast:* In a small bowl, mix the warm milk and sugar. Sprinkle the yeast over the mixture and let it sit for about 5-10 minutes until it becomes frothy.
2. *Mix the dough:* In a large mixing bowl, combine the flour and salt. Add the yeast mixture, melted butter, and eggs. Mix until the dough comes together.
3. *Knead the dough:* Transfer the dough to a lightly floured surface and knead for about 10 minutes until it is smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment.
4. *First rise:* Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

 Shaping the Buns:
5. *Divide the dough:* Punch down the risen dough and divide it into 12 equal pieces.
6. *Shape the dough:* Roll each piece of dough into a long rope and then coil it into a swirl shape as shown in the picture.
7. *Second rise:* Place the shaped buns on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and let them rise for another 30-45 minutes until puffy.
