Sweet Fluffy Milk Bread


For the Tangzhong (Water Roux):

  • 3 tablespoons bread flour
  • 1/2 cup water
  • 1/2 cup milk

For the Bread Dough:

  • 2 1/2 cups bread flour
  • 2 tablespoons milk powder
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast
  • 1/2 cup milk, warm
  • 1 large egg, beaten
  • 1/4 cup unsalted butter, softened

For the Glaze:

  • 2 tablespoons melted butter
  • 1/4 cup condensed milk


  1. Prepare the Tangzhong:
    • In a small saucepan, whisk together the bread flour, water, and milk until smooth.
    • Cook over medium heat, stirring constantly, until the mixture thickens and forms a paste (about 3-5 minutes).
    • Remove from heat and let it cool to room temperature.
  2. Make the Dough:
    • In a large mixing bowl, combine the bread flour, milk powder, sugar, salt, and instant yeast.
    • Add the warm milk, beaten egg, and the cooled tangzhong.
    • Mix until the dough comes together, then knead for about 5 minutes.
    • Add the softened butter and continue kneading for another 10-15 minutes, or until the dough is smooth and elastic.
    • Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  3. Shape the Bread:
    • Punch down the dough to release the air.
    • Divide the dough into 6 equal portions and shape each portion into a ball.
    • Roll each ball into an oval shape, then fold the shorter ends towards the center.
    • Roll up the dough tightly into a log and place them seam-side down in a greased loaf pan.
    • Cover with a damp cloth and let it rise again for about 45 minutes, or until doubled in size.
  4. Bake the Bread:
    • Preheat your oven to 350°F (175°C).
    • Brush the top of the dough with a beaten egg for a glossy finish.
    • Bake in the preheated oven for 25-30 minutes, or until golden brown and the bread sounds hollow when tapped.
  5. Add the Glaze:
    • Mix the melted butter and condensed milk in a small bowl.
    • Brush the hot bread with the glaze immediately after removing it from the oven.
    • Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  6. Serve:
    • Slice the bread and enjoy its soft, fluffy texture with your favorite spread or as it is.
