Slow Cooker Barbecue Beef Brisket



  • 1 (4-5 pound) beef brisket
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup barbecue sauce
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt


  1. Prepare the Brisket:
    • Pat the brisket dry with paper towels. Rub the salt, black pepper, smoked paprika, ground cumin, and chili powder evenly over the brisket.
  2. Sear the Brisket:
    • Heat the olive oil in a large skillet over medium-high heat. Add the brisket and sear on all sides until browned, about 4-5 minutes per side. Transfer the brisket to a slow cooker.
  3. Prepare the Sauce:
    • In the same skillet, add the chopped onion and garlic. Cook until softened, about 3-4 minutes.
    • Add the beef broth, barbecue sauce, soy sauce, brown sugar, Worcestershire sauce, apple cider vinegar, and Dijon mustard. Stir well to combine and bring to a simmer.
  4. Slow Cook:
    • Pour the sauce over the brisket in the slow cooker.
    • Cover and cook on low for 8-10 hours, or until the brisket is tender and easily shreds with a fork.
  5. Finish the Brisket:
    • Once the brisket is cooked, carefully remove it from the slow cooker and place it on a cutting board. Let it rest for a few minutes before slicing.
    • If you prefer a thicker sauce, transfer the sauce from the slow cooker to a saucepan and simmer over medium heat until it reaches your desired consistency.
  6. Serve:
    • Slice the brisket against the grain and serve with the barbecue sauce. This brisket pairs well with mashed potatoes, coleslaw, or cornbread.
