Ingredients:
• 200 g Enochi mushrooms, cleaned and cut into small pieces
• 10-12 slices of bacon, finely chopped, cut into pieces
• Freshly ground black pepper to taste

• Spring onion, finely chopped, for garnish
Preparation:

1. Prepare the Enoch: Start by gently cleaning the Enoch mushrooms with a damp cloth. Remove the ends of the carrots and cut them into small pieces. Each bundle should be about the width of a piece of bacon. 2. Bacon filling: Take half the bacon and spread evenly on top. Place the Enoch twine on one side of the piece of bacon and begin wrapping, making sure the bacon is tightly wrapped around the mushrooms. The bacon should cover the mushrooms just above the surface. Repeat this process until all the mushrooms and bacon are used.
