Savory Blue Cheese and Pecan Puff Pastries

 

Ingredients:

For the Pastry:

  • 1 package of puff pastry (2 sheets), thawed
  • 1 egg, beaten (for egg wash)

For the Filling:

  • 1 cup crumbled blue cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup heavy cream
  • 1/2 cup pecans, roughly chopped
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon honey (optional)
  • Salt and pepper, to taste

For Garnish:

  • Fresh thyme sprigs
  • Additional pecans, whole or halved
  • A drizzle of honey (optional)

Instructions:

  1. Prepare the Puff Pastry:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper.
    • Roll out the thawed puff pastry sheets on a lightly floured surface to smooth them out.
    • Cut each sheet into squares (about 4×4 inches).
  2. Prepare the Filling:
    • In a medium bowl, mix the crumbled blue cheese, cream cheese, and heavy cream until well combined.
    • Season with salt and pepper to taste.
    • Gently fold in the chopped pecans and fresh thyme leaves.
  3. Assemble the Pastries:
    • Place a spoonful of the cheese mixture in the center of each puff pastry square.
    • Fold the corners of each square towards the center, slightly overlapping them, and press down gently to seal.
    • Arrange the pastries on the prepared baking sheet.
  4. Egg Wash:
    • Brush the beaten egg over the tops and edges of the pastries to give them a golden, glossy finish when baked.
  5. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the pastries are puffed and golden brown.
  6. Garnish and Serve:
    • Remove from the oven and let cool slightly.
    • Garnish each pastry with a fresh thyme sprig and a few additional pecans.
    • Optionally, drizzle with honey for a touch of sweetness.
    • Serve warm.
