Introduction

Chocolate Cotton Cake is a delicious and light dessert, similar to chiffon cake but even lighter, almost cloud-like. Ingredients
For the cake:
• Egg whites: 6 large
• Egg yolks: 6 large
• Sugar: 3/4 cup, divided
• Cake flour: 1 cup
• Cocoa powder: 1/4 cup
• Milk: 1/2 cup
• Vegetable oil: 1/4 cup
• Cream of tartar: 1/2 teaspoon
• Salt: Hazelnut

Step 1: Prepare the cake batter
1. Preheat the oven: Preheat your oven to 160°C. Prepare your pan by covering it with paper. Do not leave the butter aside as it needs to stick to the wall for the cake to rise properly.
2. Yolk mixture: In a large bowl, whisk together egg yolks and half the sugar (3/8 cup). Fry until golden brown and thickened. Mix the butter and milk until well combined. Sift the cake flour and cocoa powder and add the salt. Blend until the mixture becomes smooth.
3. Prepare the meringue: In a separate, clean bowl, using an electric mixer, beat the egg whites and cream of tartar until foamy. Gradually add remaining 3/8 cup while beating until stiff peaks form. This creates a meringue that gives the cake its beauty.
Step 2: Combine and cook
1. Fold the meringue into the yolk mixture: Gently fold one-third of the meringue into the yolk mixture with a spatula until partially combined. Add the remaining meringue in two portions and mix gently to make the mixture as smooth as possible.
2. Bake the cake: Pour the batter into the prepared pan. Tap the pan on the counter to remove excess air. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
3. Bake the cake: Turn off the oven and open the oven door slightly to allow the cake to cool slowly. This prevents the cake from falling. After about 15-30 minutes, remove the cake from the oven and let it cool completely on a cooling rack.
Step 3: Serving
1. Roll out the cake: Once the cake has cooled completely, run a soft knife around the edges to release the cake. Carefully invert onto a serving plate.
