Peanut Butter Panna Cotta with Crushed Nuts

 

Ingredients:

  • For the Panna Cotta:
    • 2 cups heavy cream
    • 1 cup whole milk
    • 1/2 cup sugar
    • 1/2 cup smooth peanut butter
    • 1 tablespoon gelatin powder
    • 3 tablespoons water
    • 1 teaspoon vanilla extract
  • For the Topping:
    • 1/2 cup mixed nuts (such as peanuts, almonds, and cashews), crushed

Instructions:

  1. Prepare the Gelatin:
    • In a small bowl, sprinkle the gelatin powder over 3 tablespoons of water. Let it sit for about 5 minutes to bloom.
  2. Heat the Cream Mixture:
    • In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring occasionally, until the mixture is hot and the sugar is completely dissolved. Do not let it boil.
  3. Add the Peanut Butter:
    • Stir the peanut butter into the hot cream mixture until it is fully melted and smooth.
  4. Add the Gelatin:
    • Remove the cream mixture from the heat. Add the bloomed gelatin and stir until it is completely dissolved.
  5. Add Vanilla:
    • Stir in the vanilla extract.
  6. Strain and Pour:
    • Strain the mixture through a fine-mesh sieve into a pouring jug to ensure a smooth panna cotta. Pour the mixture into individual serving glasses or ramekins.
  7. Chill:
    • Allow the panna cotta to cool to room temperature, then cover with plastic wrap and refrigerate for at least 4 hours, or until set.
  8. Prepare the Topping:
    • While the panna cotta is chilling, crush the mixed nuts and set them aside.
  9. Serve:
    • Just before serving, sprinkle the crushed nuts over the top of the panna cotta for a delightful crunch.
