Pan-fried Mediterranean cod with tomato-basil sauce


2 tablespoons olive oil
1/4 teaspoon crushed red pepper
3 large cloves of garlic, finely chopped
1 cherry tomato, halved
1/4 cup vegetables broth
3 tablespoons fresh lemon juice (divided 1 tablespoon for dressing, 2 tablespoons for sauce)
1/2 cup fresh basil, finely chopped
1/2 teaspoon fresh lemon zest
1/2 teaspoon salt (more to taste)
1 tablespoon 1 pure sugar
1/4 teaspoon freshly ground black pepper (more to taste)
1 and 1/2 pounds fresh cod, cut into 4 pieces
Salt and pepper to taste


For the sauce: Heat the pan. olive oil in a large pot over medium heat. Add red pepper and garlic and cook for 1 minute. Add cherry tomatoes and cook until soft and translucent (9-12 minutes).
Mix the vegetable mixture with 1 tablespoon of lemon juice. Let it go. Then add the basil, 2 tablespoons of lemon juice, zest, salt, sugar and black pepper. Cook for 2 minutes and then set aside. For Code
: Heat olive oil in another pan over medium heat. Sprinkle the cod with salt and pepper. Cook until golden brown (about 3 minutes on each side).
Pour the tomato sauce over the cod, heat for a minute and serve.
