No-Bake Peach Cheesecake Bars

 

Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

For the Peach Topping:

  • 1 can (15 oz) peach slices, drained and chopped (reserve a few slices for garnish)
  • 1/4 cup peach preserves or jelly

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.
    • Press the crumb mixture firmly into the bottom of a 9×13-inch baking dish to form an even layer.
    • Place the crust in the refrigerator to set while you prepare the filling.
  2. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
    • Add the powdered sugar and vanilla extract, and continue to beat until well combined.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until well combined and smooth.
  3. Assemble the Cheesecake Bars:
    • Spread the cheesecake filling evenly over the prepared crust in the baking dish.
    • Arrange the chopped peach slices evenly over the cheesecake filling.
  4. Prepare the Peach Topping:
    • In a small saucepan, warm the peach preserves or jelly over low heat until it becomes slightly liquefied.
    • Brush the peach preserves over the chopped peaches to give them a glossy finish.
  5. Chill and Serve:
    • Place the assembled cheesecake bars in the refrigerator to chill for at least 4 hours, or overnight, until firm.
    • Once set, cut the cheesecake into bars and garnish with reserved peach slices if desired.
