Moist Fruit Cake

 

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 cup mixed dried fruits (raisins, cranberries, chopped apricots, etc.)
  • 1/2 cup candied fruits (optional)
  • 1/2 cup chopped nuts (optional)
  • 1 tablespoon all-purpose flour (for tossing fruits)

Instructions:

  1. Prepare the Oven and Pan:
    • Preheat your oven to 325°F (163°C).
    • Grease and line a 9×5 inch loaf pan with parchment paper.
  2. Cream Butter and Sugar:
    • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add Eggs and Vanilla:
    • Add the eggs, one at a time, beating well after each addition.
    • Stir in the vanilla extract.
  4. Combine Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Alternate Mixing:
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Prepare the Fruits:
    • Toss the mixed dried fruits, candied fruits (if using), and nuts (if using) with 1 tablespoon of flour. This helps to keep them from sinking to the bottom of the cake.
    • Fold the fruit and nut mixture into the batter.
  7. Bake the Cake:
    • Pour the batter into the prepared loaf pan and spread it evenly.
    • Bake in the preheated oven for 70-80 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Cool and Serve:
    • Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
    • Slice and serve.
