Lemon Cherry Cream Dessert

 

Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Lemon Cream Layer:

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1/2 cup sweetened condensed milk
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest

For the Cherry Layer:

  • 1 cup cherry pie filling
  • 1/2 cup fresh cherries, pitted and halved (optional)

For the Topping:

  • Whipped cream
  • Fresh cherries
  • Lemon slices

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
    • Press the mixture firmly into the bottom of a 9×9-inch square baking pan. Chill in the refrigerator while preparing the filling.
  2. Prepare the Lemon Cream Layer:
    • In a large mixing bowl, beat the heavy whipping cream with powdered sugar until stiff peaks form. Set aside.
    • In another bowl, beat the cream cheese until smooth and creamy. Add the sweetened condensed milk, lemon juice, and lemon zest, and mix until well combined.
    • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  3. Assemble the Layers:
    • Spread half of the lemon cream mixture over the chilled crust.
    • Spoon the cherry pie filling evenly over the lemon cream layer. Add fresh cherries if desired.
    • Spread the remaining lemon cream mixture over the cherry layer, smoothing the top.
  4. Chill the Dessert:
    • Refrigerate the dessert for at least 4 hours, or until set.
  5. Add the Topping:
    • Before serving, garnish the dessert with whipped cream, fresh cherries, and lemon slices.
  6. Serve and Enjoy:
    • Cut into squares and serve chilled. Enjoy the refreshing combination of lemon and cherry flavors!
